Another favorite company that I purchase from on a regular basis? Organic Valley! A few years ago - or, right after Riley was born, I started realizing that I wanted to offer my children the best possible foods I could. Regarding organic, I found the below list simple and helpful regarding why I try to choose organic when I can...

1. Nutrient density.

Organic farmers nourish the soil that feeds our food. Research shows that organically-produced foods are higher in antioxidants and other nutrients than their conventional counterparts.

2. No persistent pesticides or synthetic fertilizers.

Designed by intent to kill living organisms, persistent pesticides can be harmful to wildlife and human health, especially as they contaminate our food, air and water or accumulate in our cells. Synthetic fertilizers require large quantities of fossil fuels to produce, and contribute to soil degradation and ocean dead zones. more: pesticides fertilizers

Avoiding synthetic hormones (which are frequently given to conventional dairy and meat animals to alter reproductive cycles and speed up growth) means less stress for animals, and reduced human exposure to endocrine-disrupting chemicals. more

Overuse of antibiotics in farm animals leads to the development of dangerous antibiotic-resistant infections. Organic farmers instead rely on natural measures to promote and maintain animal health. more

5. No GMOs.

Genetically engineered crops are a relatively recent technology with potentially devastating impacts on ecosystems and human and animal health. Organic regulations forbid the use of genetically engineered seeds or animals (including clones). more

6. Animal care.

Organic philosophy means raising animals in harmony with nature. Quality animal care keeps animals healthy and productive, naturally. As we like to say, happy cows make the best milk! more

Organic Valley is a farmer owned coop, a group of farmers working together to provide the best possible organic products. You often may look at the organic offerings in the grocery store and notice they are more expensive, this is why. The proceeds go directly back to the actual farmers who are working hard to provide the best possible food, free from chemicals, antibiotics and treating their animals responsibly.

Slow-cooked, caramelized onions could make soggy cardboard taste yummy, but in a grilled sandwich with tart apples and sharp cheese, the combo is ethereal. This recipe is slightly adapted from one created by Anne Roesler of Madison, Wisconsin. She entered it in the city’s Food for Thought Recipe Contest (sponsored by REAP Food Group) several years ago and won a prize for her efforts. The recipe is so good it also made it into the 2012 Wisconsin Local Foods Journal (written by Joan Peterson and Terese Allen).

2 tablespoons extra virgin olive oil
1 pound sweet onions, thinly sliced
a few sprigs of fresh thyme or rosemary
salt and pepper
Organic Valley butter, softened
8 slices hearty bread
1 tart apple, thinly sliced
15-20 thick slices of sharp cheese (such as Organic Valley Raw Sharp Cheddar Cheese)

1. First caramelize the onions: Heat olive oil in a skillet over medium-low flame. Add sliced onions and desired herbs. Cook, stirring occasionally, until onions are very soft and very sweet. This will take 40-50 minutes, and they should then be reduced to about a quarter of the amount you started with. Putting a lid on the skillet, but keeping it slightly ajar, keeps the onions from drying out too much. When onions are done, remove herb sprigs and season onions with salt and pepper to taste.

2. To assemble the sandwiches, butter both sides of bread slices. Spread a couple tablespoons of onions on unbuttered side of half the bread. Arrange a few slices of apple on onions. Cover with cheese slices. Then put the other slice of bread on top with buttered side facing out.

3. To cook: Heat a griddle, skillet or panini maker to medium-high heat. Cook sandwiches on both sides until bread is toasted and cheese is melted.

Quick Smocks for the Littles

Ok, I admit it, this isn't technically a tutorial but it's a great tip for all those little artists out there! I just happened to have two of my own Picassos and we need a lot of smocks!

Grab Dad's or Grandpa's old oxford shirt (one that they won't be wearing again) and have them wear it backwards, roll the sleeves and button it up the back. Viola! Instant smock! I've found these to be very durable and a great way to up-cycle our clothing.

Vanilla Bean Oatmeal Scones

Yup, she did it again

Carrie, the Bakeaholic Mama, came up with this oh, so delicious recipe for wholesome, delicious Vanilla Bean Whole Wheat Banana Oatmeal Scones. The girls enjoyed these as after school snacks and I was in heaven while sipping my coffee with these in the morning. I love me a good scone and these are layered with flavors that just work.

Ingredients:
2 cups white whole wheat flower
1/4 cup sugar
1 tbs baking powder
1/2 tsp salt
1 1/4 cups quick cooking oats
1/2 cup butter
1/3 cup half and half
1 banana mashed
1 vanilla bean
8tbs vanilla sugar (or just raw sugar)
extra half and half for brushing

Directions:
Preheat oven to 425.
In a medium bowl combine flour, and baking powder.
Cut in butter with a pastry blender until you have pea sized bits.
Mix in sugar, salt, oats. Mix on medium speed in your electric mixer.
Add in half and half, and banana. Mix on medium until its combined.
Split your vanilla been in half length wise scrape the inside with a spoon. Mix in all of the vanilla into your scone mixture.
On a parchment paper lined cookie sheet pat your dough into a disk, about 1 inch thick.
Cut into 8 large triangles (slice like a pizza).
Slightly separate each scone about 1 inch from each other.
Brush with half and half, and sprinkle with vanilla sugar.
Bake for 10-14 minutes until they are golden brown.

So, I decided to try to make a yarn wreath. In retrospect, I'm thinking it would be much easier to make that without a "helper". I was determine and excited to show off my finished product but as always, life gets in the way. Instead I'll show you the work in progress....

Make Your Own Ice Rink Tutorial

Last week, I talked about the backyard ice rink that we built and all the fun it has been. Several people have emailed and asked how he did it so I thought I'd go straight to the "master carpenter" for the information. Here's what he did -You'll need

· 2X4’s (2 – 10 Foot and 4 – 8 foot)

· Joining plates (to join 8 foot 2x4’s into 16 foot lengths of the long sides)

· Right angle joining brackets (for the insides of the corners)

· Galvanized roofing nails (big heads but not so long that they poke out through the 2x4’s)

· 1 Sheet of 3 Mill painters plastic (10 foot width, and I think 25 foot length – something like that)

He created the frame by making the long sides – joining them with the plates and putting the right angle brackets on each end. Then, he laid out the sheet of plastic where the rink was going to be and put the long sides under it, leaving enough slack so he could nail the edge of the sheet to the top of the 2x4 and hang down to the ground . FYI - Try to leave additional slack for ay corner or side that needed to be propped up to level the rink – this way the plastic won’t pull so hard if it is suspended from the ground with a ton of water in it.)

Next, he attached the ends. He had to leave about 4 – 5 inched hanging over the “short” side due to the width of the plastic and the amount of “hang down” it would need – this is why the right angle brackets need to be on the inside of the corners, not the outside (unless you are going to cut off the excess). Then you tack the plastic in place all along the top of the 2X4 “box” you have created with the galvanized nails, about a foot apart, but closer together if water is pooling into one area adding extra weight and stress on the plastic. In some areas on ours, he has the nails spaced only about 4 inches apart.

Then you fill with water. If it is not on absolutely level ground, you may need to prop up a side or corner (he used excess 2x4 scraps) so that water doesn’t fill up one side, while leaving another side “high and dry”.

Then… wait for it to freeze.

This weekend, I had a little time to myself and I reflected on a few things, I thought more about what I really wanted to accomplish this year and change about myself. Bad habits...we all have them, some bigger than others. One habit that I have drags me down and I suppose the road to breaking this is to admit it. Here goes: At times I beat around the bush. I say yes when I mean no, I am not as direct as I should be. Why? To save face? To avoid embarassment, to make others happy? What I'm starting to realize that in an effort to make others happy, I'm not always making myself happy and I end up feeling resentful, even bitter. So, one of the major traits I'm working on this year, is to make myself more direct. Say what I mean, do what I want. I'm not saying that you have to be rude or neglectful in doing so but it's important to speak up for what you truly want in life.

I look at my two children and see that they are direct. They tell me what they want, when they want it. At what point do we loose this quality?

No Bake Granola Snacks - Inexpensive & Healthy

Last week I talked a little about making our own snacks in an effort to eat healthier and save money. One of the new recipes we tried was a recipe that I found on Pinterest for these delcious no bake granola snacks. First, let me tell you that I've made granola bars in the past and they've come out very well but these are the first no bake variety from Food Doodles that my family devoured. So, here goes!

Makes 12 (Adapted from Oh She Glows)

2 large overripe bananas
1 cup oats
1/2 cup crunchy cereal (I used Kashi)
2 tbsp pure maple syrup(or any other sweetener you use but I used maple syrup and it worked well!)
2 tbsp peanut butter or other nut or seed butter
2 tbsp semi-sweet chocolate chips
2 tbsp dried cranberries or other fruit (we skipped this because I didn't have any on hand)
2 – 4 tsp cocoa powder

Line a muffin pan with paper liners, or use a silicone muffin pan for easy removal. Mash the bananas. Add wet ingredients and cocoa powder and mix well. Add all other ingredients, mix well then press into prepared muffin tin. Freeze at least 60 minutes before serving.
Angela from Oh She Glows recommends eating them while they’re still soft, but we like keeping them in the freezer for easy snacks.

These are delicious and economical! A great and healthy snack to add to your rotation this year!

Dinner on the cheap - Creamy Light Spinach Enchiladas

Recently I've talked about saving money by using your coupons and meal planning. Here's one of the recipes that we've enjoyed over the past couple of weeks. We're huge Mexican fans so it works for us. Plus, it's a super inexpensive meal and pretty healthy to boot! You can make variations and substitute what your family likes most but this really helped my "let's go out for Mexican" craving last Saturday night. Plus, I tend to eat a little less at home so good for me all around.

Here goes -

Creamy Light Spinach Enchiladas (Adapted from Real Simple's recipe)

1 10 ounce package of thawed frozen Spinach (squeeze out the water)

1 cup frozen corn, thawed

1 and 1/2 cups of cheddar cheese - or use what you like

1 jar chopped green chilis (these are mild so my family enjoys them more than some spicy varieties but you could use fresh jalapenos or the spicy pepper of your choice!)

1 cup light sour cream (or regular - or even heavy cream if you want it even creamier)

kosher salt and pepper

8 - 6 inch corn or wheat tortillas - I've been told these are very easy to make but buy mine

1 tablespoon Cilantro

Heat oven to 400° F. In a medium bowl, mix together the spinach, corn, 1 cup of the Cheddar, and the chilies. In a small bowl, stir together the sour cream, ¾ teaspoon salt, and ¼ teaspoon pepper.

Dividing evenly, roll up the spinach mixture in the tortillas (about ⅓ cup per tortilla). Place seam-side down in a shallow baking dish. Top with the cream sauce and the remaining ½ cup of Cheddar. Sprinke with Cilantro and cover with foil and bake until bubbling, 15 to 20 minutes. Uncover and bake until golden, 10 to 15 minutes more.

We serve ours with a side of chipotle coleslaw or tortilla chips.

Channeling my inner Dorothy Hamill!

My apologies for that horrid picture....but, can you see that?

My husband decided to build the girls a little ice rink! Unlike most Winters, we've had little snow here in the Northeast. Instead of sledding, the girls have been busy riding bikes, swinging and playing outside in the 50+ degree weather but the temperature dropped for a few days and after realizing it would cost $30+ for us all to go the local rink for an hour, he decided to build a our own.

We used it for the very first time this past weekend and it was SO MUCH FUN! We were slip sliding away and the girls had blast (helmets on, of course!) Warm mugs of hot cocoa (or coffee for me!) topped off an inexpensive and fun activity. This was one project that I take no credit for, it was all him and I'm so happy that he did it.

Of course today, it's mild again, so the ice is melting but chillier temps are on the horizon, we can't wait!

One of my goals this year (and in year's past) is to keep it local. When I say that, I'm refering to purchasing food, gifts, etc from my immediate area, supporting our downtown businesses and farmers whenever possible. We have had a couple new fantastic shops in our area open recently as well as some new restaurants. Even though we rarely eat out, we will be trying to frequent independently owned eateries over some of the more popular chains. That being said, it isn't always realistic or financially possible to always buy local so you have to do what works for you. I'd be a liar if I said that here in the Northeast I could purchase local tomatoes in January or afford local organic dairy products. So, I try hard to learn more about the companies that I purchase from and feel better about supporting those companies who, in my opinion go "above and beyond". Over the next few Tuesdays, I'm going to focus on these companies and tell you about what makes them different than the usual suspects...

Cabot Creamery - What I love about Cabot Creamery is that they are a farm family owned cooperative located in Vermont. Members include 1,200 family farms throughout New England and New York all working to craft delicious cheddar and dairy products. Inexpensive Date Night

As many of you know, when you're a parent, your movie watching can easily go from the latest Oscar contenders to the latest animated picture (which yes, in some cases can be both but you get what I'm saying). Over Christmas break, we went to see the new Muppet movie, which was actually pretty good and a movie worthy of spending the $50 it takes now for a family of four to hit the movies. We were lucky enough to have a gift card but again, I really feel like it's a shame that the movies have gotten so expensive. Every family should be able to enjoy the movies, but that's just my opinion. Anyway, after that movie, we decided to start taking in a few movies we haven't had an opportunity to see. We started with some documentaries which have been interesting, entertaining, silly and fun. So, here goes.....

Superheros - Inside The World of Real Life Caped Crusaders: Let me start by saying that this was not my pick. Having said that, it was entertaining. The documentary surrounds various men and women as they embark on their quest to be real life superheros. The film explores what inspires these individuals to "fight crime", lend a hand to people in need and patrol the streets. It was actually quite interesting and funny at times. The end segment showcases these superheros helping out the homeless, some driven to simply help people. There's no web flinging or attempts to fly, just a story of people who want to help "the greater good". Our take? My husband enjoyed it, I fell asleep but enjoyed the overall message of the film.

Smash His Camera: This documentary follows Ron Galella, one of the first paparazzos. Now 77, the film gives an overview of how he got started, his history and famous subjects. His favorite, Jacqueline Kennedy Onassis, sued him twice in her life. The documentary stirs an interesting debate regarding what makes a good photograph, privacy and personal rights. It also is a fascinating look at Ron Galella who to this day, breaks all boundaries to grab a shot of a celebrity even though, in his eyes, there are no more real movies stars. Our take? We both enjoyed this interesting look at celebrity and photography.

Thespians: Film tells the story of four theater troupes in Florida and their journey to attend the most competitive theatre competition in the world. My take - fun movie capturing just how talented young people are and well, I love Glee....enough said.

We watched this last movie a couple of months ago but it's worth a look...
The King of Kong: A Fistful of Quarters: Classic arcade games, silly, retro, 80s - all the components of what I enjoy. Oh and it's a story of an undog and his quest to become the best Donkey Kong player ever. My take - if you take movies too seriously, this isn't for you but if you want to laugh, be entertained and wear your acid washed jeans to boot, this movie is for you.

Clearly the focus on the above movies were entertaining and there are other documentaries worth of watching in my near future but these were fun so I'd recommend them!

Grilled Cumin Chicken.....healthy and so good!

I've been craving some delicious grilled chicken these days. On New Year's Day, I decided to try the Farm Chicks (yes, I love - love - love their cookbook!) Grilled Cumin Chicken a try.

1/2 cup sour cream (I used light)

1 tablespoon honey

1 teaspoon hot red pepper sauce

1 large clove garlic, minced

1/2 teaspoon ground cumin

1/4 teaspoon salt

2 skinless, boneless chicken breast halves

First, make your marinade - Mix together the sour cream, honey, hot pepper sauce, garlic, cumin and salt in a medium bowl, set aside

Prepare your chicken - Cut the chicken breasts into large bite sized pieces. Add to the bowl with the marinade and toss to combine. Cover and refridgerate for at least 2 hours.

Grill the chicken - Heat an outdoor grill to medium - high. Place a lightly greased mesh grill topper on the grill. Grill the chicken until cooked through - about 4 minutes, turning once. Remove chicken from grill and serve with your favorite dipping sauce.

The Farm Chicks use their apricot dipping sauce but I've used peanut sauce or a lime sauce in the past. Be sure to check out this cookbook - The Farm Chicks in The Kitchen.

SNOW!

It's snowing! Many of you aren't that impressed with that but, the fact that this is the first major snowstorm that we've had since HALLOWEEN, it's pretty amazing. Our "Winter" has been mild, free from snow and littered with 50 degree days. The girls have been out bike riding lately and enjoying the grass, even though it's a shade of brownish yellow instead of green.

So, we've been dreaming of snow and making a lot of snowmen...

But today, we're going to try to make our own! Horray! Afterall, that's what January should be about - especially when you live in the Northeast!

We've moved on from the drums....

Last week I talked a bit about our lovely holiday and the gifts throughout our house. Sydney certainly played with them but still continued to find creative ways to pass the time.

Sydney has discovered the wonder of painting this week and hasn't put her brush down. Of course we've painted in the past but the easel has given her a new love of painting. She attacks her paper with her "vision". I can hardly keep up with her.

"Mama, I would like more paint.....please!"

"Mama, please look at the purple I made from the red and blue!"

"Mama, this is a beautiful hot air balloon!"

I can hardly stand it, it's wonderful to see her this enthusiastic about her artwork!

It almost makes the Jackson Pollock wall worth it.

Tuesday Tips - The Meal Plan

One of my goals for 2012 is to consistantly try to create, maintain and follow a meal plan. Seems simple enough but I can't tell you how many times my "plan" goes to the wasteside because we just aren't feeling it? We're starting the year off strong though and trying to allow for a little flexibility during the week.

The lowdown - Basically, the meal plan is comprised of three main dinners for six days and allows for an optional night for something special, whether it be homeade pizza or a meal out. Yes, it could be difficult encouraging leftover consumption but so far, everyone has been up to the challange and since my husband knows that this is a more economical way to eat our food, he's been very excited with the idea. Plus, let's be honest - it's easy to eat a little better after and have a more strict plan after all the holiday indulgence!

"Eating well is expensive" - Our meals are full of whole grains and vegetables, with our main protein sources coming from beans, eggs and nuts. The girls prefer it and again, from an economical standpoint, "the man of the house" does as well. We leave our meat consumption to be on a special occasion, a Summer cookout or an evening out. As I've said in the past, I pay attention to the sales so if I spot a great deal on something (like this week's $1.99 a pound boneless chicken breast), I'll incorporate it. This allows for a lot of soups, stews and casseroles that really stretch into a couple of days. We alternate the meals to reduce the boredom factor.

Here is an example of this week's meal plan, composed of Creamy Spinach Enchiladas, Chicken Tikka Masala (the girls prefer is without the chicken) and Crockpot Enchilada Soup...a week of Mexican and Indian! Last week, we focused on Italian, with Pasta Fagioli Soup, Lentil "Meatballs" with sauce and brocoli and lemon brocoli pasta. Of course many of the entrees are accompanied by a salad or a vegetable too and luckily, we all enjoy that.

Breakfast - Healthy, wholesome and economical! We eat a lot of oatmeal, cereal and yogurt. It's always accompanied by fruit to ensure everybody starts their day with a full belly of goodness. Check out this heart healthy recipe here! We reserve special breakfast treats like this for holidays and special occasions.

Lunches - Our lunches vary but my husband will take leftovers or opt for soup or a sandwich. We typically will have egg sandwiches, fruit salad with yogurt, hummus, crackers and veggies or peanut butter/jam sandwiches. The kids love to have "little bits" of fruit, cheese, veggies and nuts too.

Snacks! Who doesn't love a good snack? The bottom drawer of my refridgerator are "grab and go snacks" - washed/precut and portioned veggies, apples and oranges. We tend to eat seasonally so that we can get the freshest produce for the best value. I also am focused on making three snacks weekly including muffins, cookies and granola. This way, I can ensure the snacks we eat are low in sugar, high in fiber and all natural.

Write it down! I purchased an inexpensive notebook for meal planning, or you can download a free printable menu planner at The Project Girl. If you have children, it's a great idea to post it where everybody can see it before they start their day that way they will have an idea of "what's for dinner" and won't protest if you have pasta and pesto on the menu instead of fish sticks.

Avoid the rut! I browse my favorite blogs, Bakeaholic Mama, Weelicious, Simply Healthy Family and Food Doodles to ensure I'm not getting stuck making the same old thing. These blogs and websites also ensure the recipes are healthy and delcious. Keeping it exciting and having variety ensures optimum nutrition and reduces the boredom factor.

Sales & Coupons - Plan those meals around your sale flyers and the coupons you have matched up with those flyers! With a little work you can create a well rounded meal plan (or that's the goal). If you didn't catch my post about couponing, check it out here!

Weekending + Pinterest = One Happy Girl

There is something about a lazy, low key weekend that I adore. Especially after the rush of the holiday season. This weekend, our family - just the four of us enjoyed just that. It was 48 hours of cozy indoor relaxation, some Friendship Bracelet making, lots of play, reading and snuggles. Saturday evening, we enjoyed a yummy dinner of Spinach Enchiladas....more on hat later this week.

Oh and finally discovered the ~~obession~~ wonder of Pinterest. WOW! I knew there were some talented people out there but the ideas, crafts, recipes? Amazing. I really understood what the big deal was but as of Friday, I became clearly a fan. I'm still figuring it all out but feel free to follow along!

This week will be more organization and helping my Mom make her first car purchase in a long, long time (her engine blew on Friday but thankfully, she was fine). We also have an early release day and some mild temps for this time of year here in New England so we will try to get some outdoor activities in as well!

Cherry Breakfast Swirl....thank you Farm Chicks

With two kids, we debated on going out to breakfast New Year's Eve. Instead, we decided to enjoy a low key morning with good coffee and a festive dessert would be a great way to celebrate the end of 2011. I grabbed The Farm Chicks in the Kitchen and was torn between a few scrumptious recipes, including Nancy's Nutmeg Coffee Cake. In the end I decided on the Cherry Breakfast Swirl. Rich, sweet and moist - this was the perfct way to celebrate the start of the new year. I wouldn't make it just for any 'ol day because it's rich and special. I would, however, recommend making it when a group of friends are together because it is one of those treats you appreciate and can overinduldge in (not that I would ever do such a thing).

Cherry Breakfast Swirl

Makes 20 Servings

Working Time 25 Minutes

Total Time 55 Minutes

1 1/2 cups sugar

1 cup unsalted butter, softened

2 teaspoons vanilla extract

1 teaspoon almond extract

4 large eggs

3 cups flour

1 1/2 teaspoons baking powder

1 21 ounce can cherry pie filling

1/2 cup sliced almonds

First, prepare your batter - Heat the oven to 350 degrees. Butter or coat your large jelly roll pan. Cream the sugar with the butter in a large mixing bowl with an electric mixer on medium speed until fluffy. Beat in the vanilla and almond extracts and the eggs. Reduce the mixer speed to medium-low and beat in the flour and baking powder just until blended.

Bake the cake - Spread two-thirds of the batter in the prepared pan, the batter will look insufficient and spread thinly. Then, using the back of the spoon, flatten each little mound of the batter just a bit. Sprinkle on the sliced almonds. Bake until the cake is lightly browned - 28-30 minutes. Serve warm or at room temperature. Store in the pan, covered with plastic wrap, up to 3 days.

Eat a piece, enjoy and then get to the gym.

Family Traditions

I miss the holidays. I really do. It seems like December flew by and what I love most about that most special month is the traditions that we share as a family. Here are a few pictures from our Christmas Eve "baking spectacular". Miss Sydney prefered to roll the dough - and did so for over an hour and Riley prefered to create works of art with each cookie.

It was such a special time, which is why I think I tend to experience the "after Christmas blues". At the same time, there is something to be said for a fresh start and a New Year. Not to mention the lack of scattered pine needles all over my floor.

The start of a new year results in my quest to find a home for all the new items we've aquired over the holidays. It leads to me to the realization that people are very generous, we are running out of space and that it's time to make a few trips to the local donation center. It's a great feeling to clean, organize and regroup after the past few busy months. The girls are also very busy becoming aquainted with their new items. Here's a peek of what we've bee doing over our vacation....

All these fabulous new gifts and yet we still prefer Mama's wooden spoon and our treat tins to play the drums....

Tuesday Tips - Use those coupons!

Let me start by saying I am by no means an "extreme couponer". I've read articles, seen morning show segments and visited websites of those people who spend hours preparing their grocery lists and end up walking out with (for example) over $453 in groceries but only paying $14. What I've noticed is that often times, these people purchase things that I might not ever use or need and in large quantities.
I do, however, find a real value in using coupons. On average, I save about $25 weekly on my grocery bill simply by preparing before I hit the grocery aisles, shopping smarter, reviewing the weekly sale flyers and having a meal plan. I don't stockpile. I don't buy items I don't need. I simply try to get the most value for my money and try to feed my family a natural, healthy diet and purchase local whenever possible.

I figured I'd share some simple things that I do which have led me to some success....you may already do these things, find that they won't work for you or don't have the time but what I've found is that if you take baby steps you will eventually find savings. In this tight economy every little bit helps!

Grab your flyer! I shop at one particular grocery store that tends to have better prices however, we have three grocery stores locally. The local store flyers are delivered to us weekly in the mail so I pay attention to the sales. If one particular store offers a sale on something that we always use (King Arthur Flour, organic milk, etc) I'll make an extra trip that week. Oh and use your flyers - even if you don't "coupon" you can still plan a menu around the items that are on sale that week and save that way. Our store had all natural boneless chicken breasts for $1.99 a pound a few weeks before the holidays so we had chicken enchiladas and chicken soup that week.

Clip your coupons - You can get the traditional Sunday paper, which offers (on average) 3 inserts weekly. Our paper also offers a "Local" section which results in more coupons for local eateries and shops so be sure to check that out too. You can also print your coupons online, here are some of the more popular:

Mambo Sprouts - Great for organic and healthy living products!

Visit the websites of your favorite brands for savings or email them directly. This actually works and I've received some great coupons on my favorite brands like Olivia's Organics, Earthbound Farm and others. Here are a few pages I visit often:
Chobani Yogurt
Organic Valley

Buy a magazine chalk full of coupons. All You is one that has tons of coupons but you'll also find great ones in Parents, Women's Day and some great organic ones in Kiwi

Let them do the work - Visit sites like I Love To Gossip, Coupon Mom, Organic Deals and Coupons and Jessica's Coupons to find great deals, high value coupons and savings opportunities. Each has a facebook page as well so you can keep informed.

You can also buy coupons off Ebay or various couponing sites on the web if there is a particular brand you buy more often than others. Just watch expiration dates and the fine print on these and don't pay too much because in the end, the goal is actually SAVING money!

Big Box -Target.com and Walmart offer coupons on their websites that are printables. You can stack those store coupons with a regular manufacturer's coupon for more savings. Sam's Club, BJs and Costco are also clubs that require memberships but offer lower prices when buying in bulk so if you have a larger family, this may be for you!

Keep it local - Contact your local farmer to see what offers they have on seasonal produce, CSAs and more. This can be economical, healthier AND tastier!

Happy New Year!

After a bit of a break, I am back. I hope you all had a wonderful holiday season.....hard to believe it's over. We had a great time these past few weeks and (as usual) the special time seemed to fly by even quicker than in the year's past. I soaked it all in....every giggle, smile, grab of the gift, sweet singing voices, exhausted meltdowns (yes, even those). This past week in particular has been a time of reflection and preperation for the upcoming year. I thought a lot about 2011 and all the sweet gifts it brought and look forward to this new year. I can hardly believe it's 2012.....my first baby turns EIGHT (yes, eight! I cringe as I write that) and my "baby" turns four.

Time keeps on moving....

I have a lot of goals for 2012....not "resolutions" in particular but new plans, dreams, hopes. I also strive to be a better listener, more patient and understanding. I also want to remember how lucky we are and how lucky I am. These tender sweet days, when my family is together, healthy and happy. These are the sweetest moments. I hope 2012 continues to be this special and sweet.

We're almost there....thisclose. I'm sure all of you are busy the next couple of days with last minute prep, celebrations, cooking, baking and wrapping. So to that I say, "Get off your computer!" For those of you who are done and just sipping your egg nog....I'm very jealous and congratulations to you. I swear, judging by the stores, you represent 7% of our population!

I also wanted to take this time to thank all my friends for reading my little 'ol blog. I've enjoyed it this year and for the next week or so, plan to take a little break from the daily posting. But, I'll be back soon!

Orange Chocolate Hazelnut Bark

Easy, delicious, inexpensive....this is an easy and great gift!

1 navel orange
8 ounces bittersweet or semisweet chocolate, chopped
2/3 cup hazelnuts, skins removed, coarsely chopped
1/8 teaspoon coarse salt

Directions

Line a small (9-by-13-inch) baking sheet with aluminum foil; refrigerate. With a vegetable peeler, remove zest from half the orange. With a sharp knife, cut zest into very thin strips, each about an inch long.
Place chocolate in a heatproof bowl set over (not in) a pan of simmering water. Stir until melted and completely smooth. Mix in half the zest and hazelnuts. Immediately, pour onto prepared baking sheet; with a flexible rubber spatula, spread into an 8-by-10 inch rectangle about 1/4-inch thick. (To help spread chocolate, tip baking sheet up and down.) Sprinkle with remaining zest, nuts, and coarse salt.
Refrigerate until firm, about 30 minutes. To serve, break into pieces. To store, transfer to an airtight container, and refrigerate, up to 3 days.

It's on....it's really snuck up on me this year and I have so, so, SO much to do this week! This past weekend we attended our annual family Christmas party....and now, it's history! That means...only days away from Christmas! This week will be filled with baking, wrapping, a little shopping and hopefully, enjoying these last special days before the big day. Sorry for the short post but lots to do! Here's a peek at what I'll be making this afternoon...super easy, rich and a great teacher gift, these Oreo Truffles are sure to please!
Ingredients

1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
2 (8 ounce) packages BAKER'S Semi-Sweet Baking Chocolate, melted

Directions

Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Peanut Butter+Chocolate= One Holly Jolly Elf

On the holiday fair circuit last weekend, I came across a lot of bake sales and goodie tables. I can surprisingly usually resist but did come across a lady selling something that didn't look spectacular but after further, investigation and a ~~giant "sample~~" taste test, decided that this would be on my "to do" list for holiday baking. So here goes....
Peanut Marshmallow Candy

2 1/2 lbs white chocolate
18 ounces smooth peanut butter
2 cups dry roasted peanuts (optional)
2 cups miniature marshmallows
3 cups Rice Krispies

Melt together the white chocolate and the peanut butter in a pan in the oven at 200°F Then stir in:.
peanuts,marshamallows and cereal. Drop by spoonfuls on wax paper. Place in fridge for a few minutes to set.

I'm hoping to make a "test batch" this weekend in addition to celebrating and spending some quality time with the family!

It's pouring rain here in the Northeast and the cold is settling in, so I thought I'd share this picture from a sunnier day! Granted, I'm not used to 60 degree weather in Decemeber but I welcome it.

I'd be a complete liar if I were to say that I have our holiday in the bag. Shopping is half done, crafting is a quarter done, baking...haven't started! In fact, we just finished our decorating the house yesterday. Every year it's the same - I'll slow down, enjoy more, soak it all in...and then come the invitations, the time commitments, the wrapping....it all seems to suck more of my time than I'd like. Yesterday we vowed to make some Christmas gifts but ran out of time and opted for baths instead. And then there is the holiday photo for the Christmas card....yes, we still send cards and I'm lucky enough that Good Gravy! takes care of the design and makes them look amazing. But, the "perfect pose" is just not reality in our family. Last year, the girls were less than jolly by the end of the fabulous festive photo shoot - after a zillion pictures only a couple reflected them both smiling and none of them captured real smiles, just ~~get this over with so I can go play~~ forced grins. This year, I decided to go with a candid shot....simply because I've run out of time. The staged photo in front of our tree will have to wait till next year but I'm ok with it, as I need more time to wrap!

Little Itty Bitty Apple Pies

PIE POPS!

About a month ago, I introduced you to one of the healthiest and yummiest recipe blogs I've found in a while, Bakeaholic Mama. She presented this delicious apple pie recipe and I had to try them out. They were the perfect size, sweet and so yummy. The best part was that I didn't feel too guilty enjoying one (or maybe two)...think of them as a cake pop, pie style. SO GOOD.

Pie Pops

Ingredients:

Double pie crust (Recipe found here) you can use store bought if you want to make this really easy!

Chunky apple sauce (recipe found here)

popsicle sticks

Directions:

Preheat oven to 400.
Roll out your pie crust to about and cut circles out with a 1.5-2 in circle cookie cutter or use a glass
of some sort. I used a large shot glass I had in the cupboard.
Lay circles on a parchment paper lined cookie sheet.
Place popsicle sticks in the center. Give a slight press on the stick to keep it in place.
Top the stick with about 1 tsp of your apple sauce.
Then top with a 2nd circle and crimp edges with a fork sealing the 2 crusts together.
Bake for about 15 minutes or until crust is golden....I went a little too long but next time they will look prettier!

As for me, I'm coming off back to back holiday fairs at the Kennebunkport, Maine Christmas Prelude event. What a lovely kick off to the holiday season, the town is beautifully decorated and the people are gracious and wonderful. Although I spent two days away from my family (it's good for Dad to have the pleasure of all the duties!) it was a great weekend but I'm exhausted. Luckily for me, my kiddos keep it real and remind me it's the most wonderful time of the year (queue the music!) So, this week I'll be consuming a lot of coffee and singing Jingle Bell Rock all the way!

Enchilada Casserole

Inspired by a recipe over on Weelicious, we decided to try to make Enchilada Casserole. Initially intimidated by making my own enchilada sauce, I found it quite easy and it made a HUGE difference in the recipe. I often find that store bought sauces are too spicy so this is the way to go in the future! This would be the perfect dish to serve with holiday company and big crowds and it's red and green so quite festive!

Enchilada Sauce

1 Tbsp Olive Oil
1 Small Onion, cubed
1 Garlic Clove, minced
1/2 Tsp Kosher Salt
1 Tbsp Ground Cumin
1 Tbsp Chili Powder
1 Tsp Honey
2 fresh cored and seeded tomatoes, diced or you can use a Can Diced Tomatoes, unsalted
1 Cup Water

Filling

1 Tsp Chopped Onion
1 Garlic Clove
1/2 Tsp Cumin Powder
1/2 Tsp Kosher Salt
1/2 Cup Organic Sour Cream
1 Egg
1 Cup fresh corn (used this Pampered Chef Kernel Cutter (genius!) that my friend Katrina surprised me with) or you can use Frozen Corn Kernels
1-15 Oz Can Black Beans, drained
1 Medium Red Bell Pepper, diced
3 Tbsp Fresh Cilantro, chopped
2 1/2 Cups Mexican Cheese Blend, divided
12 Corn Tortillas

1. Preheat oven to 350 F.
2. Heat 1 tbsp of oil in a small saucepan over medium heat and sauté the onions for 4 minutes. Add the garlic, salt, cumin and chili powder and sauté an additional minute.
3. Add the honey, diced tomatoes and water. Stir, bring to a boil, cover and simmer for 10 minutes.
4. Allow mixture to cool for 10 minutes then place in a blender, puree and set aside.
5. In a large bowl, whisk the onion, garlic, cumin powder, salt, sour cream and egg.
6. Stir in the corn, black beans, bell pepper, cilantro and 2 cups of cheese to combine.
7. Pour 3/4 cup of the enchilada sauce on the bottom of a 7×11 baking dish. Cover with 2 corn tortillas.
8. Spread half of the mixture on top of the tortillas and top with another ½ cup of sauce followed by 2 more tortillas.
9. Spread the remaining mixture on top of the tortillas, top with the remaining 2 tortillas, sauce and cheese.*
10. Bake for 40 minutes uncovered.
11. Serve.

*At this point the casserole can be covered and frozen. When ready to serve, bake in a 350 degree oven for 45 minutes.

Sort of like a Mexican Lasagna - this was full of flavor, texture and goodness!

Everybody loved it!

I don't know about you, but around this time of year, we have the tendancy to entertain....A LOT. That means, I'm stalking the refridgerator full of cheese and cupboards with lots of crackers. Always on the look for something tasty and different, I was intrigued when I had an opportunity to try out the Crunchmaster Multi-Grain Crackers that I was sent from their company.

Now I love crackers and chips (sigh), especially crunchy ones! Unfortunatley those snacks aren't always the best choices for us, because of the added junk in them and of course, the dreaded sodium. Always hunting for good snacks I can serve and feel good about, I was pretty excited to see that Crunchmaster offers a variety of flavors and are gluten free, all natural, 0g trans fat and cholesterol free! Pinch me, I must be dreaming!

These Crunchmaster Multi-Grain Crackers come in three yummy flavors: White Cheddar, Roasted Vegetable and Sea Salt. My favorite is the Sea Salt. I tried them solo, dipped in hummus, with cheese and with peanut butter. The crunch was satisfing and the flavors were tasty without being too salty. The kids loved them, which I was excited about since they are a snack that I can feel great about.
I also found that they helped me with that snacking craving I tend to have mid day without making me feel like I did a bad thing. You really should try this for yourself!

These were on my agenda for Thanksgiving and will continue to be throughout the holiday season. They are seriously a snack that I can feel good about sharing and not worry about over induldging. Let me start by saying, I'm no stranger to holiday craft books and I eagerly await the arrival of Martha Stewart's December issue every year. This book is unique and special, one that I will be holding onto and passing on. Chalk full of ideas for entertaining, crafting, cooking, baking and spreading holiday cheer, I quickly created a "to do" list which became a "MUST do" list before I hit the last page. I adore the Snowball Pom Pom ornament craft, perfect if you have little ones! Finally, special and beautiful ornaments that can be thrown across the room (not that that's ever happened in my home of course!) I also think the silhouette ornaments would make the perfect gift for a grandparent. There's a creative section to help you use unique gift wraps with a vintage feel and help for packing and shipping handmade holiday goodies including the cutest handmade serving cones! Then there's the recipes....Mini Orange Bundt Cakes, Dark Chocolate Mint Cookies and Coffee Latte Punch, just to name a few. This book is an excellent resource to cove your vintage inspired holiday.

Filled with memories of Serena's past Christmases; yummy recipes for warming drinks treats and more. At the end of the book, there are color recipe cards (make copies or use the originals to attach to those homemade goodies) plus 2 pages of sticker gift tags!

This is a wonderfully written book chock full of entertaining stories, and all the recipes and decorating ideas you need to make sweet and special memories with your friends and family.

Thanksgiving Countdown!

Although not nearly as fancy as theirs, we were inspired by the girls over at The Letter 4 to make our "Thanksgiving Countdown Tree". What I loved about this project, is that you can really make it elegant and beautiful or whimsical and fun....or a little bit of everything. What's most important is that you really think about the things you are most thankful for because that's what Thanksgiving is all about!

For our craft, we started with some Autumn inspired scrapbook paper and started tracing our leaves. While the girls got started on that, I printed off the template, available on The Letter 4's blog here.

Then, the girls came up with the things they are thankful for, on the white side of the paper. Basically, write on the opposite side that you want displayed on your tree.

We cut each leave out...

And numbered our leaves to "countdown" the days until Thanksgiving and after coloring, stuck each leave on the tree with a tiny piece of tape.

Each day, the girls take turns to pull a leave off and ready what they are thankful for, it's been a wonderful new tradition for our family!

A few months ago, I came across an adorable shop, Pretty Little Things. I was lucky enough to order a set of the cutest little ponytail holders, with little flowers. So dainty and beautiful, the girls enjoyed each pop of color in their hair! Different and pretty, I knew that I would be shopping at Pretty Little Things for gifts and of course, my two daughters.

Bumblebee & Sophie Feature!

Like so many of you out there, I've been doing holiday fairs recently to promote The Paper Stork. It's a lot of work but also fun checking out new shops and promoting my business. Recently, I came across Bumblebee and Sophie and immediately fell in love with their designs.

I first spotted their vintage inspired booth set up the day before the fair. The products weren't there yet, but judging by the funky set up, I knew it had potential. The next morning, I spotted the most adorable baby and children's clothes from Bumblebee and Sophie!

A little about Bumbleebee and Sophie: We are Cindy, Sarah and Sophia. A mother, daughter and granddaughter. A combination of Cindy's sewing and quilting expertise, Sarah's business savvy and Sophia's cuteness, Bumbleebee and Sophie is the creative union of three generations.

The Chelsy Dress

Dissatisfied with the "typical" baby bedding in the stores, Sarah asked her mother, Cindy, to create a custom crib bedding set for Sophia. The result was a beautiful, eye-catching combination of playful fabrics. From there both Cindy and Sarah were inspired to create clothing that featured similar bold and fresh fabrics. The two decided to combine their areas of expertise (Cindy and award winning quilter and Sarah a former small business owner) to create a beautiful, boutique line of little girls clothing. The result: Bumblebee and Sophie
